What varietal is used for Sancerre wines?

Sancerre wine is made in France in the Loire Valley, (by the way Loire is a river known for its beautiful and famous Castles).Sancerre is a small Appellation (or region) within the Loire Valley which counts 330 winemakers and produces 22 million bottles each year!

It is well known for its clay and its limestone soils.

Sancerre grows only 2 varietals :

All white wines are Sauvignon Blanc and all the red wines are Pinot Noir.

What do they taste like?
